Yeah right, you think. Meatless Mondays. My husband will say "Honey, are you serious?" My kids will balk... I thought the same thing.
Well, I decided not to tell the DH that he was eating a meatless meal until after he complimented it and said I should make it again sometime soon. I told him that's good, because it's healthy for our bodies and pocket books for us to eat meatless every once-in-a-while. He was so surprised he hadn't noticed there wasn't any meat in the "Santa Fe Fold-Overs" He then was intrigued to try more meals with out meat - thus starting a trial run of Meatless Mondays. Some meals can simply have the meat omitted - saving you whatever the cost of the meat would have been. Some you can swap for something else - like mushrooms for ground beef in spaghetti sauce. Others that I will post here will simply be meals that are so full of other things, you may be able to trick those meat lovers in your family into agreeing to Meatless Mondays. You probably wont feel like you are missing anything either, because most of our meatless meals have hearty helpings of beans and other legumes - keeping us fuller for longer - and money in our pocket book longer too.
